Wine Maker Comments:

With the amount of Cabernet grown by the Sea Shell Estate, it was only a matter of time before we made a pure Cabernet from our favorite section. Coming off the oldest vines on the estate, this Reserve wine offers powerful aromas of cassis, dark cherries, and tobacco. As the wine warms on your palate, it evolves further enticing characters of cedar, fresh-cut vanilla bean and even a subtle note of petrichor!! This wine has most structure and heft out of the 2016 lineup, and generously offers elegant, fine-grained tannis throughout the course of its finish.

Vinification:

This lot was picked early in the morning to keep the fruit cool prior to processing. The Cabernet Sauvignon was then de-stemmed and sorted into a stainless steel tank. 10% of its volume was then bled off in order concentrate the varietal intensity of the flavors and tannin from the grape skins. The Cabernet Sauvignon was pumped over twice per day during fermentation and remained on skins for 21 days prior to pressing.

Soil Type:
The soil type is rolling alluvial terraces with decomposed limestone deposits along its slopes.
