Wine Maker Comments:

The first thing you'll notice about this wine on your palate is its true-to-roots bright, vibrant acidity that gracefully and deftly carries the wine aross your tongue. This elegance is very reminiscent of the variety's roots in Bourguil and Saumur in the Loire Valley of France. But as this wine moves, it gains strength and reveals ample, chewy tannins that provide the necessary structure for this bottle to last for years to come. Subtle notes of anise, clove, and graphite linger with the lasting, generous finsh of those tannins, providing a beautiful, Paso Robles take on a traditional, French style of Cabernet Franc production.


This lot was picked early in the morning to keep the fruit cool prior to processing. The Cabernet Franc was then destemmed and sorted into a stainless steel tank. 10% of its volume was then bled off in order to concentrate the varietal intensity of the flavors and tannin from the grape skins. The Cabernet Franc was pumped over twice per day during fermentation and remained on skins for 23 days prior to pressing.
