2020 Low Tide
Wine Maker Comments:
Made from a mixture of the younger and older vines on the estate, this Cabernet displays an expressive mixture of developed flavors and youthful structure that can be enjoyed early but will reward with aging in the bottle.
Vinification:
All were picked early in the morning to keep the fruit cool. 10% of the volume of each lot was bled off in order to concentrate the varietal intensity of the flavors from the grape skins. Smaller lots were destemmed and sorted into 1-ton open top fermenters that were punched down 2-3 times per day. The larger lot was destemmed into a stainless steel tank and pumped over twice per day. Lots were kept on skins for 16-23 days prior to pressing.
