2020 Reserve Cabernet Sauvignon
Wine Maker Comments:
Made from the oldest vines on the estate, this Cabernet displays some of the most developed flavors and structure that the property has to offer. This wine should evolve nicely for 7-8 years.
Vinification:
This lot was picked early in the morning to keep the fruit cool prior to processing. The Cabernet Sauvignon was then destemmed and and sorted into a stainless steel tank. 10% of its volume was then bled off in order to concentrate the varietal intensity of the flavors and tannin from the grape skins. The Cabernet Sauvignon was pumped over twice per day during fermentaion and remained on skins for 23 days prior to pressing.
