2021 Estate Cuvee
Wine Maker Comments:
The Sea Shell Estate Cuvee is like a traditional Paso Cabernet Sauvignon, but with much more depth. It is big and weighty with moderate acidity. There is a long savory finish - almost umani like. This wine would be delicious with heavy food... the classic steak pairing!
Vinification:
All grapes were picked early in the morning to keep the fruit cool for processing. Both lots were destemmed into stainless steel tanks and pumped over twice per day. Lots were kept on skins for 18-21 days prior to pressing.
