2021 Surf Balboa
Wine Maker Comments:
The Surf Balboa shows a broad palate feel. It has a long, drying finish that brings out a subtle dried herbal/sage character. You can also get some dried fruit leather on the palate. It would pair nicely with game/lamb/venison and smoked meats!
Vinification:
All lots were picked early in the morning to keep the fruit cool. 15% of the Syrah and Tempranillo volume was bled off in order to concentrate the varietal intensity of the flavors from the grape skins. Both varieties were destemmed and sorted into stainless steel that were pumped over two times per day. The Syrah stayed on skins for a toatal of 18 days and the Tempranillo was on skins for 14 days prior to pressing.
