Wine Maker Comments:
Made from the oldest vines on the Sea Shell estate, this Cabernet Franc displays the expressive varietal character of a classic Saumur or Bourgueil!
Vinification:
This lot was picked early in the morning to keep the fruit cool prior to processing. The fruit was then destemmed into small 1-ton open top fermenters that would be punched down 2-3x daily to manage extraction. This lot was pressed after 18 days on skins in a small 12hL basket press.
