2022 Surf Balboa
Wine Maker Comments:
The Surf Balboa shows a broad palate feel. It has a long, drying finish that brings out a subtle dried herbal/sage character. You can also get some dried fruit leather on the palate. It would pair nicely with game/lamb/venison and smoked meats!
Vinification:
In 2023, our Syrah was picked on August 31st and our Tempranillo on September 30th. Both lots were hand-picked, hand sorted, destemmed, and lightly crushed into fermenters-the Syrah in open-top fermentors and the Tempranillo in stainless steel. After a few days of cold soaking in the tank, the musts were inoculated with yeast and fermented at a target temperature of 85F. Two punch-downs were performed daily on the Syrah until it was ready for press after 11 days of fermentation. Two pump-overs were performed into French oak barrels for 20 months of rest until bottling in July of 2023.
