2023 Reserve Cabernet Sauvignon

Wine Maker Comments:

Made from the oldest vines on the estate, this Cabernet displays some of the most developed flavors and structure that the property has to offer. This wine should evolve nicely for 7-8 years.

Vinification:

For this wine, we sourced Cabernet Sauvignon from our estate Block 4. The grapes were harvested in the early morning of October 12, 2023, then destemmed  and 50% crushed before being transferred to a stainless-steel tank. Fermentation was maintained at approximately 90 degrees F, with pump-overs conducted twice daily to encourage optimal extraction. After 19 days of fermentation, the wine was pressed and aged for 18 months in French oak barrels, 35% of which were new oak.
