2022 Estate Cuvee
Wine Maker Comments:
The Sea Shell Estate Cuvee is like a traditional Paso Cabernet Sauvignon, but with much more depth. It is big and weighty with moderate acidity. There is a long savory finish - almost umani like. This wine would be delicious with heavy food... the classic steak or lamb pairing!
Vinification:
Both lots were hand-picked, hand-sorted, destemmed, lightly crushed into fermenters-the Syrah in open-top fermentors and the Cabernet stainless steel. After a few days of cold soaking in the tank, the musts were inoculated with yeast and fermented at a target temperature of 85F. Two punch-downs were performed daily on the Syrah until it was ready to press after 11 days fermentation. Two pump-overs were performed daily on the Cabernet Sauvignon until it was ready to be pressed after 13 days of fermentation. The pressed-out wines were left to settle until they were ready to be transferred into French oak barrels for 20 months of rest until bottling in July 2023.
