2024 Chardonnay

This bright and balanced Chardonnay is a beautiful expression of our neighbors in the Cental Coast AVA. It's rare for us to work with cool-climate fruit, as our wines are typically made with grapes from the Sea Shell Vineyard in the hot, windy northeastern hills of Paso Robles. We hope you enjoy this delicious white wine all year long!
Vinification:
The grapes were picked in the early morning hours. We pressed the grapes immediately upon arrival at the winery, where the juice was transferred to a stainless steel tank for 48 hours of chilling and settling. The juice was then transferred to neutral barrels for fermentation. We inoculated with 2 yeasts, NBC and CY3079. NBC yeast is a yeast used to make fresh and refined Chablis-style Chardonnay with enhanced floral, citrus, and mineral notes. CY3079 is highly complimentary for barrel-aged whites with lees contact. The ferment was cold and slow with a target fermentation temperature of 50-55 degrees. Fahrenheit. After 21 days, the wine completed fermentation and was transferred to 50% new French oak for 7 months of aging. We stirred the sediment (lees) in the barrel twice a week and allowed for 80% malolactic fermentation completion.
