2023 Merlot
Vinification:
The grapes were harvested in the early morning of October 4, 2023, then destemmed and transferred to two open-top fermenters. It then went into a two-day cold soak. Fermentation lasted 15 days at a controlled temperature of around 85 degrees F, with pump-overs performed twice daily to ensure optimal extraction. Once fermentation was complete, the wine was pressed and transferred to a combination of once-used French oak and neutral barrels, where it aged for 18 months.
