2023 Low Tide
Wine Maker Comments:
Made from a mixture of the younger and older vines on the estate, this Cabernet displays an expressive mixture of developed flavors and youthful structure that can be enjoyed early but will reward with aging in the bottle.
Vinification:
For this wine, we sourced Cabernet Sauvignon grapes from two estate vineyards blocks: Block 4 and Block 8. The grapes were harvested in the early morning of October 12, 2023, then destemmed and 50% crushed before being transferred into two stainless steel fermentation tanks. The ferments were pumped over twice daily and kept at a temperature of around 90 degrees. Fermentation lasted 19 days for Block 4 and 14 days for Block 8. After pressing, the wine was aged for 18m months in 35% new French oak barrels.
